A few months ago, aiming to increase the coffee culture in the Bulgarian market, Martines Caffe Family Coffee Roastery managed to organize for the first time in the Bulgarian coffee industry a coffee tasting or cupping of specialty coffees called: PREMIUM COFFEE CUPPING, where the local coffee business owners took participation.



THE ATTENTION OF THE EVENT


In this enjoyable experience, full of aromas and tasty coffees from different origins, one of them called the attention of the attendances. It was Colombia San Juanero Decaffeinated with Sugar Cane. Yes, it is correct, sugar cane, the same source from where sugar or brown sugar comes. All the people in the cupping room started asking about this coffee and more information about the process itself. That is why we decided to write an article explaining this innovative method. So get ready with a cup of freshly roasted coffee.

MAKING THE DIFFERENCE: HOW THE PROCESS WORKS

The decaffeination process uses fresh spring water combined with the natural compound obtained from the sugar cane, being those two the only substances that get in touch with the green coffee beans.

This caffeine stripping process (fresh spring water and natural compound from sugar cane) allows a gentle caffeine extraction from the beans. In this way, is retained the natural structure of the beans, in other words, helps to preserve the aromas and tastes of the coffee. After the coffee passes through this process, the caffeine level could go as low as 0.03%, being less than the European norm, which allows a maximum of 0.1%. It means that the caffeine has been replaced with the sugar compounds, so what is the result?

WHAT IS THE RESULT

Thanks to this process, Colombia San Juanero is very sweet as a taste. Coming from Huila Region, with the quality of 84 points, it poses notes of Cinnamon, Vanilla, Apricot, and other fruits. This type of decaffeinated process is being offered for the first time in the Bulgarian market. A recommended brewing method could be espresso, filtered, or Moka pot.
